This quick and easy marinated flank with chimichurri sauce is a great change from creamy sauces, it is fresh and vibrant and delicious. The steak is best braaied over coals or wood.

Ingredients
'--FOR THE MARINADE
125ml sunflower oil
80ml orange juice
80ml lemon juice
45ml soy sauce
45ml Worcestershire sauce
3 garlic cloves, crushed
500g beef flank steak
FOR THE CHIMICHURRI SAUCE
250ml parsley
250ml coriander
125ml olive oil
2 spring onions, sliced
3 garlic cloves, crushed
45ml lime juice
30ml red wine vinegar
½ red chilli, chopped
Directions
1For the marinade, combine all the ingredients and cover the flank in the mixture.
2Marinate for at least 2 hours or preferably overnight.
3For the chimichurri, blitz all the ingredients until finely chopped. Season.
4Prepare your fire. Shake excess marinade off the steak and season.
5Cook for about 5 minutes on each side for medium or until cooked to your liking.
6Set aside to rest for 5 minutes. Serve with the chimichurri.
