The zesty marinade tenderises the meat (and adds stacks of flavour to this chicken on the braai, too!)

4 chicken breasts
3 tbsp olive or avocado oil
zest of 2 lemons, juice of 1
3 tsp sumac (from speciality spice shops)
2 tsp ground cumin
1 tbsp coriander, chopped
1 red onion, thinly sliced
1 tbsp tahini mixed into 6 tbsp yoghurt
1/4 cucumber, sliced thinly
extra lemon wedges
griddled or toasted pita breads
1Put the chicken breasts between 2 sheets of clingfilm and, using a rolling pin, beat to flatten out. Put the chicken in a bowl with 2tbsp oil, the lemon zest, 1/2 the juice, 2tsp sumac, the cumin and coriander. Marinate for 30 mins.
2Meanwhile, mix the red onion with the remaining oil, lemon juice and sumac.
3Heat a braai or griddle and grill the chicken for 4-5 mins each side until cooked through. Serve with the red onion, tahini yoghurt, cucumber, lemon wedges and pita breads.
